Ingredients
- 1 lb boneless skinless chicken thighs
- ¼ cup coconut aminos
- 2 tbsp apple cider vinegar
- 1 cup low-sodium chicken broth
- 3 cloves garlic
- 2 bay leaves
- ½ tsp peppercorns
- 2 cups steamed bok choy
Instructions:
- Sear chicken lightly.
- Add remaining ingredients and simmer 20–25 minutes.
- Reduce sauce slightly and serve over greens.
