Ingredients

  • 1 lb boneless skinless chicken thighs
  • ¼ cup coconut aminos
  • 2 tbsp apple cider vinegar
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic
  • 2 bay leaves
  • ½ tsp peppercorns
  • 2 cups steamed bok choy

Instructions:

  1. Sear chicken lightly.
  2. Add remaining ingredients and simmer 20–25 minutes.
  3. Reduce sauce slightly and serve over greens.
