Ingredients
- 12 large wild shrimp
- 1 large eggplant
- ½ mango, diced
- 1 small tomato, diced
- 1 tbsp red onion
- Juice of 1 lime
- 1 tsp olive oil
- Sea salt
Instructions:
- Char eggplant, peel, and mash.
- Grill shrimp 2–3 minutes per side.
- Combine eggplant with mango, tomato, onion, oil, and lime.
- Top with shrimp.
