Grilled Shrimp & Mango Ensaladang Talong

Ingredients

  • 12 large wild shrimp
  • 1 large eggplant
  • ½ mango, diced
  • 1 small tomato, diced
  • 1 tbsp red onion
  • Juice of 1 lime
  • 1 tsp olive oil
  • Sea salt

Instructions:

  1. Char eggplant, peel, and mash.
  2. Grill shrimp 2–3 minutes per side.
  3. Combine eggplant with mango, tomato, onion, oil, and lime.
  4. Top with shrimp.
